Repair the seat or recover it?

It depends how far the damage has gone. A cut or a burn in sound material is patched, or one panel is replaced. Leather that has cracked along the whole bolster has lost its finish and its flex, so a repair sits on a failing surface and splits again within a year. Ask the shop to show you both options on your own seat before you choose.

Why does a headliner sag, and can it be fixed?

The foam behind the fabric breaks down with heat, and once it crumbles the fabric has nothing left to hold it up. Glue and pins are a patch that always shows. The proper repair drops the board out of the car, strips off the old foam and fabric, and bonds new material to a clean board. Cars parked in the sun get there first.

Can a cigarette burn be repaired?

Usually, and how well depends on the material. Cloth is patched with a donor piece taken from somewhere hidden, often under a seat, and woven in so the weave lines up. Leather and vinyl are filled, grained to match the texture, then colored. A burn that went through to the foam needs the foam cut out and replaced first, or the repair sinks.

When does a convertible roof need replacing?

When the fabric has gone porous, the seams have opened, or the rear window has crazed to the point you cannot see out of it. Some of that is fixable on its own. A plastic rear window can be replaced in a sound fabric roof, and worn seals or a stiff frame are separate jobs. A shop that does roofs will say which part actually failed.
